Pour r\u00e9aliser 24 truffes, vous aurez besoin de :<\/p>

\u2022 200g de chocolat noir<\/p>

\u2022 20cl de cr\u00e8me liquide enti\u00e8re<\/p>

\u2022 50g de beurre<\/p>

\u2022 2 cuill\u00e8res \u00e0 soupe de cognac Meukow VSOP<\/a><\/p>

Coupez le chocolat en morceaux. Faites chauffer la cr\u00e8me jusqu\u2019\u00e0 \u00e9bullition. Versez sur le chocolat et patientez 1 minute avant de commencer \u00e0 m\u00e9langer \u00e9nergiquement \u00e0 l\u2019aide d\u2019une maryse. Ajoutez le beurre coup\u00e9 en petits morceaux et m\u00e9langez jusqu\u2019\u00e0 ce qu\u2019il soit bien incorpor\u00e9. Une fois le m\u00e9lange bien lisse, ajoutez le cognac, m\u00e9langez.\u00a0<\/p>

Couvrez au contact avec du film alimentaire ou du papier sulfuris\u00e9 et laissez refroidir compl\u00e8tement \u00e0 temp\u00e9rature ambiante ou placez au r\u00e9frig\u00e9rateur afin d\u2019acc\u00e9l\u00e9rer le refroidissement.<\/p>

\u00a0<\/p>

Apr\u00e8s au moins deux heures au r\u00e9frig\u00e9rateur, (plus c\u2019est mieux), sortez le saladier et formez des boules d\u2019environ deux centim\u00e8tres de diam\u00e8tre. Ne pas trop les travailler, le chocolat fond tr\u00e8s vite au contact de la chaleur des mains.<\/p>

Pour finir, roulez les truffes dans votre couverture favorite : cacao amer, poudre de pistaches et pralines roses en poudre. Mais vous pouvez aussi utiliser de la noix de coco ou m\u00eame les tremper dans du chocolat fondu et les laisser durcir, les truffes auront une fine couche de chocolat croquante et l\u2019int\u00e9rieur fondant.<\/p>
